Prepare the Prawns

Coat the Prawns
In a bowl, mix the cornstarch, salt, and egg white until well combined. Add the prawns and toss to coat evenly.

Fry the Prawns
Heat oil in a deep pan over medium heat. Fry the coated prawns in batches until they are golden and cooked through, about 3-4 minutes. Remove and drain on paper towels.
Prepare the Walnut Honey Sauce

Combine Ingredients
In a small saucepan, combine the toasted walnuts, honey, chili flakes, and sesame oil. Heat over low heat until the mixture is well combined and slightly bubbly.
Prepare the Yuzu Mayo

Mix the Mayo
In a small bowl, mix the mayonnaise and yuzu juice until smooth. Adjust to taste.
Serve

Plate the Dish
On a serving plate, arrange the fried prawns. Drizzle the walnut honey sauce over the prawns, then add dollops of yuzu mayo. Sprinkle with sesame seeds and garnish with sliced scallions.
