Prepare the Filling

Make the Dumpling Filling
In a bowl, combine ground Wagyu beef, minced garlic, grated ginger, soy sauce, sesame oil, chopped green onions, salt, and pepper. Mix well and set aside.

Prepare Dumpling Wrappers
In a mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover and let rest for 30 minutes.
Assemble the Dumplings

Form the Dumplings
Divide the dough into small pieces. Roll each piece into a thin circle, about 3 inches in diameter. Place a small spoonful of the Wagyu filling in the center of each wrapper. Fold the dough over to create a half-moon shape and pinch the edges to seal.

In a small bowl, mix together soy sauce, rice vinegar, chili oil, and honey until well combined.

Plate the Dumplings
Serve the dumplings hot, drizzled with truffle butter, sprinkled with toasted sesame seeds, and garnished with micro wasabi, hickory sticks, and scallions. Serve with edamame hummus on the side and enjoy with a glass of Pinot Noir.
