Prepare the Grapes
Harvest and wash the Schönburger grapes thoroughly. Remove stems and crush the grapes to extract the juice.

Sterilize Equipment
If using a Campden tablet, dissolve it in a small amount of water and add it to the crushed grapes to sterilize the must. Let it sit for 24 hours.

Fermentation
After 24 hours, add the yeast to the grape juice and mix well. Cover the fermentation vessel with a cloth and let it ferment in a cool, dark place for about 7-10 days.

Strain and Bottle
Once fermentation is complete, strain the liquid to remove solids and transfer the wine into clean bottles. Seal with corks or caps.

Aging
Let the wine age in a cool, dark place for at least 6 months to develop its flavors.
