Beef Tenderloin and Lobster

Method

Preparation

    Prepare the Focaccia

    In a bowl, mix warm water and yeast. Let it sit for 10 minutes. In another bowl, combine flour, salt, and rosemary. Add yeast mixture and olive oil, and knead for 5-7 minutes. Let rise for 1 hour. Preheat oven to 400°F (200°C) and bake for 20-25 minutes.

    Make Bacon & Onion Jam

    Cook bacon in a skillet until crispy. Remove and set aside. In the same skillet, add onions and cook until caramelized. Stir in brown sugar and balsamic vinegar. Cook until thickened. Mix in crumbled bacon.

    Roast the Mushrooms

    Toss mushrooms with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 15-20 minutes until golden.

    Prepare Smashed Fingerling Potatoes

    Boil fingerling potatoes until tender. Drain, then smash slightly with a fork. Mix with butter, salt, and pepper.

    Make Rosemary Butter

    Combine softened butter and chopped rosemary in a bowl and mix well.

    Prepare Choron Sauce

    In a bowl, mix mayonnaise, ketchup, tarragon vinegar, and chopped tarragon until combined.

Cooking

    Cook the Beef Tenderloin

    Season beef tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef for 4-5 minutes on each side for medium-rare. Let it rest before slicing.

    Cook the Lobster

    In a pot of boiling salted water, cook lobster tails for about 8-10 minutes until cooked through. Remove and set aside.
