Prepare Oshi Sauce

Make the Oshi Sauce
In a small saucepan, combine maple syrup, grated ginger, and white miso paste. Heat over medium heat until the miso dissolves and the sauce thickens slightly. Remove from heat and set aside.
Prepare Sweet Soy Glaze

Make the Sweet Soy Glaze
In another saucepan, combine soy sauce, brown sugar, and rice vinegar. Heat over medium heat, stirring until the sugar dissolves. Allow the mixture to simmer for about 5 minutes until slightly thickened. Remove from heat.
Cook Sablefish

Cook the Sablefish
Preheat the oven to 375°F (190°C). Place the sablefish fillets on a lined baking sheet. Brush the oshi sauce generously over the fillets. Bake for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

Plate the Dish
Once the sablefish is cooked, remove it from the oven and drizzle the sweet soy glaze over the top. Serve the fish with thinly sliced cucumber, sprinkled with toasted sesame seeds and chopped green onions.
