Preparation

    Marinate the Sablefish

    In a bowl, mix miso paste, maple syrup, soy sauce, and rice vinegar. Submerge sablefish fillets in the marinade and let sit for at least 30 minutes.

    Prepare the Red Quinoa

    Rinse the red quinoa under cold water. In a saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and set aside.

    Make Bacon Dashi

    In a pot, cook bacon until crispy, then remove and set aside. In the same pot, add water and kombu, bringing it to a simmer for 10 minutes. Remove kombu and add the bacon back in.

    Sauté Vegetables

    In a skillet, sauté shiitake mushrooms until golden brown. Add bok choy and cook until wilted. Season with salt and pepper.

    Prepare Ginger Scallion Sauce

    Mix grated ginger, chopped scallions, soy sauce, and sesame oil in a small bowl.

Cooking

    Cook the Sablefish

    Preheat the oven to 375°F (190°C). Place marinated sablefish on a baking sheet and bake for 15-20 minutes until flaky and cooked through.

Serving

    Plate the Dish

    On a plate, serve red quinoa as a base, top with sablefish, sautéed vegetables, and drizzle with ginger scallion sauce. Garnish with toasted sesame seeds and micro wasabi.
