Prepare the Mousse
In a large bowl, beat the softened cream cheese until smooth. Add peanut butter and powdered sugar, mixing until well combined. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated. Pour the mousse into the cooled pie crust and spread evenly. Refrigerate for at least 4 hours or until set.

Make the Peanut Brittle
In a saucepan over medium heat, combine granulated sugar, corn syrup, and butter. Stir until sugar dissolves, then bring to a boil without stirring. Once boiling, add the peanuts and continue to boil until the mixture turns a golden brown color. Remove from heat and pour onto a parchment-lined baking sheet, spreading it into a thin layer. Allow to cool completely before breaking into pieces.

Assemble the Pie
Once the mousse has set and the peanut brittle is cooled, top the mousse with the brittle pieces. Serve chilled and enjoy!
