Bloom the Gelatin
In a small bowl, combine the gelatin powder and cold water. Stir and let it sit for about 5-10 minutes until it blooms.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat and stir in the vanilla extract. Add the bloomed gelatin and whisk until fully dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow to cool to room temperature.

Chill
Cover the cups or molds with plastic wrap and refrigerate for at least 4 hours or until set.

Serve
Once set, serve chilled with seasonal toppings of your choice.
