Prepare Ingredients
In a mixing bowl, combine the passionfruit pulp and diced tomatoes. If using sugar or honey, add it to the mixture and stir well.

Mix the Base
Add the lemon juice to the passionfruit and tomato mixture. Stir until well combined.

Combine with Sparkling Water
In a large pitcher, add the mixture from the bowl and pour in the sparkling water. Stir gently to combine.

Pour the drink into glasses and garnish with fresh mint leaves. Serve immediately over ice if desired.
