Preparing Blinis

    Make the batter

    In a mixing bowl, combine the all-purpose flour, baking powder, and salt. In another bowl, whisk together the milk, mashed potato, and egg. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Cook the blinis

    Heat a non-stick skillet over medium heat and add a little melted butter. Pour small amounts of the batter into the skillet to form small pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.

    Keep warm

    Transfer the cooked blinis to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

    Prepare the toppings

    In small bowls, arrange the crème fraîche, egg yolks, minced shallot, chopped chives, and caviar.

    To serve, place a warm blini on a plate, add a dollop of crème fraîche, a spoonful of egg yolk, and top with minced shallot, chives, and a generous amount of caviar.
