Prepare the Beef Tenderloin
Season the beef tenderloin with cracked pepper and black truffle salt. Let it marinate for at least 30 minutes.

Cook the Beef
Preheat a skillet over medium-high heat. Sear the beef tenderloin for about 4-5 minutes on each side until it reaches your desired doneness. Remove from heat and let rest.

Prepare the Salmon
While the beef rests, lightly sear the sockeye salmon in the same skillet, skin side down, for about 3-4 minutes. Flip and cook for an additional 2-3 minutes.

Plate the Dish
Slice the beef tenderloin into medallions and place on a plate. Top with the seared salmon.

Drizzle oshi sauce and sweet soy glaze over the beef and salmon. Garnish with wasabi cress.
