Preparation

    Prepare the Lobster

    Boil the lobster in salted water for 7-10 minutes until cooked through. Remove from water, cool slightly, and extract the meat.

    Cook the Beef Tenderloin

    Season the beef tenderloin with salt and pepper. Heat a skillet over medium-high heat, add a tablespoon of oil, and sear the beef for 4-5 minutes on each side for medium-rare. Let it rest.

    Prepare the Mushrooms

    In the same skillet, add diced mushrooms and sauté until golden brown, about 5-7 minutes. Set aside.

    Make Bacon & Onion Jam

    In a pan, cook the bacon until crispy. Remove and drain on paper towels. In the same pan, add chopped onion and cook until caramelized. Mix in the crumbled bacon.

    Smashed Fingerling Potatoes

    Boil fingerling potatoes until tender, about 15 minutes. Drain, then gently smash each potato. Heat rosemary butter in a pan and sauté the smashed potatoes until crispy.

    Prepare the Sauce

    Heat the choron sauce in a small saucepan over low heat until warmed through.

Assembly

    Plate the Dish

    On a plate, start with the smashed fingerling potatoes, then place the beef tenderloin next to it. Add the lobster meat on top of the beef, and spoon the bacon & onion jam over the lobster. Garnish with sautéed mushrooms and serve with rosemary focaccia on the side. Drizzle with choron sauce.
