Method

Prepare the Potatoes

    Cook the Potatoes

    Wash and cube the red potatoes. In a mixing bowl, toss the cubed potatoes with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast in a preheated oven at 425°F (220°C) for about 25-30 minutes or until golden and crispy, flipping halfway through cooking.

Cook Chorizo

    Brown the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.

Prepare the Eggs

    Cook the Eggs

    In the same skillet used for the chorizo, add butter or oil over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook to your desired doneness (sunny-side up, over-easy, etc.).

Assemble the Dish

    Plate the Ingredients

    On a serving plate, layer the roasted breakfast potatoes, followed by the cooked chorizo. Place the eggs on top, then sprinkle diced tomatoes, sliced green onions, shredded jack cheese, and crumbled queso fresco over the dish.

    Add the Green Chili

    Finally, smother the entire dish with warm pork green chili and serve immediately.
