Wine Preparation
1. Harvesting Grapes
Select ripe grapes, ensuring they are free from any mold or rot. Wash the grapes thoroughly under cold water.
2. Crushing Grapes
Crush the grapes using a wine press or by hand to extract the juice. Collect the juice in a clean fermentation container.
3. Mixing Ingredients
In a separate bowl, dissolve the sugar in 200 ml of water. Once dissolved, add the yeast and let it sit for about 10 minutes until it becomes frothy.
4. Fermentation Process
Add the yeast mixture to the grape juice in the fermentation container. Stir gently to combine. Add tannin and sulfites to the mixture to stabilize it.
5. Primary Fermentation
Cover the fermentation container with a clean cloth and allow it to ferment at room temperature for 7-10 days, stirring daily.
6. Secondary Fermentation
Once the primary fermentation is complete, transfer the wine to a clean demijohn or fermentation vessel, leaving sediment behind. Seal with an airlock and let it ferment for an additional 2-4 weeks.
7. Bottling
Once fermentation is complete, siphon the wine into cleaned 375ml bottles, leaving a small headspace at the top. Seal with corks or caps.
8. Aging
Store the bottled wine in a cool, dark place for at least 3 months to allow flavors to develop before tasting.
