Preheat your oven to 450°F (230°C). In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Turn the dough onto a floured surface and knead gently until it comes together. Pat it into a 1-inch thick disk and use a biscuit cutter to cut out biscuits. Place them on a baking sheet and bake for 12-15 minutes until golden.

Season the chicken breasts with salt, pepper, and paprika. Dredge in flour, dip in a mixture of beaten egg and milk, then coat in bread crumbs.
