Prepare the Onions
Peel and thinly slice the onion. In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion, sprinkle with a pinch of salt, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Remove from heat and set aside.

Form the Patties
In a bowl, combine the ground beef with salt and black pepper. Form it into two equal-sized patties, about 6 oz each. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

Cook the Patties
In the same skillet over medium-high heat, add 1 tablespoon of butter. Once hot, add the patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Grill the Sandwich
Add another tablespoon of butter to the skillet and carefully flip the sandwich. Grill each side until golden brown and crispy, about 3-4 minutes per side. Repeat with the remaining sandwiches.

Serve
Once grilled, remove the patty melts from the skillet. Allow to cool for a minute, then cut in half and serve warm with your choice of dipping sauce or side.
