Preparation of Au Jus

Sauté the Onions
In a medium saucepan, heat a tablespoon of oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.

Add Garlic
Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Combine with Broth
Pour in the beef broth, soy sauce, Worcestershire sauce, black pepper, and salt. Bring the mixture to a simmer and let it cook for about 15 minutes, allowing the flavors to meld.
Assembling the Sandwich

Warm the Roast Beef
In a separate skillet, gently warm the sliced roast beef over low heat until heated through. This should take about 5 minutes.

Build the Sandwich
Layer the warm roast beef onto the bottom half of each roll. If using, top with a slice of provolone cheese.

Finish the Sandwich
Close the sandwich with the top half of the roll. Optionally, sprinkle with chopped fresh parsley for added flavor.
