    Soak the sausage casings in cold water for at least 30 minutes to make them pliable. Rinse them thoroughly inside and out before using.

    Prepare the Meat

    In a large bowl, combine the elk meat and pork fat. Cut the meat and fat into small pieces for easier grinding.

    Season the Meat

    Sprinkle all the spices (garlic powder, onion powder, black pepper, salt, paprika, red pepper flakes, thyme, coriander, and fennel seeds) over the meat and fat mixture. Add the ice water.

    Using your hands or a spoon, mix the meat and spices until well combined. Ensure the mixture is sticky and holds together.

Stuffing

    Prepare the Sausage Stuffer

    Fit the sausage stuffer with a wide nozzle and slide on one end of the soaked casing. Tie a knot at the other end of the casing.

    Carefully fill the casing with the meat mixture, being careful not to overstuff. Twist the sausages at intervals to create links and tie off the ends securely.
