Eggs

Breakfast Potatoes

    Cube the potatoes and toss them with olive oil, salt, pepper, and paprika. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes until golden and crispy.

Elk Sausage

    Cook the Elk Sausage

    In a skillet over medium heat, cook the elk sausage links for about 5-7 minutes, turning occasionally until browned and cooked through.

Black Beans

    Heat the Black Beans

    Drain and rinse the black beans. In a saucepan, combine the beans with cumin, garlic powder, and a splash of water. Heat over medium heat for about 5 minutes until warmed through.

Mushrooms

    Sauté the Mushrooms

    In a skillet, melt the butter over medium heat. Add sliced mushrooms and sauté for about 5-7 minutes until they are golden and tender. Season with salt and pepper.

House Made Salsa

    Dice the tomatoes and onion. In a bowl, combine the tomatoes, onion, chopped cilantro, lime juice, and salt. Mix well and let sit for 10 minutes for flavors to meld.
