    Prepare the Ingredients

    Dice the potatoes, onion, and bell pepper into small, uniform pieces. Rinse and drain the corned beef, then chop it into small chunks.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook until the potatoes are golden brown and tender, about 10-12 minutes, stirring occasionally.

    Add Vegetables

    Once the potatoes are cooked, add the diced onion and bell pepper to the skillet. Sauté for an additional 5-7 minutes until the onions are translucent and the peppers are tender.

    Incorporate Corned Beef

    Add the chopped corned beef to the skillet. Stir well to combine all ingredients and cook for another 5-7 minutes, allowing the flavors to meld and the corned beef to warm through.

    In a separate small skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook them to your desired doneness (sunny side up, over easy, etc.).
