Method

Corn Preparation

  1. 1

    Prepare the Corn

Preheat your grill or grill pan over medium-high heat. Brush the corn on the cob with olive oil and sprinkle with salt.

  2. 2

    Char the Corn

Place the corn on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is charred and cooked through. Remove from heat and let cool slightly.

  3. 3

    Cut the Kernels

Once the corn is cool enough to handle, carefully cut the kernels off the cob and place them in a large mixing bowl.

Creamy Sauce

  1. 4

    Mix the Sauce

In a separate bowl, combine the mayonnaise, sour cream, lime juice, and chili powder. Mix well until smooth and creamy.

  2. 5

    Combine with Corn

Pour the creamy sauce over the charred corn kernels and mix thoroughly to ensure all the corn is coated.

Toppings

  1. 6

    Add Toppings

Sprinkle the cotija cheese and chopped cilantro over the corn mixture. Serve with lime wedges on the side for drizzling.

  2. 7

    Serve

Serve the esquites warm in small cups or bowls, garnished with additional cheese and cilantro if desired.
