Method
Taco Fillings

Prepare Ground Beef
In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat.

Season Ground Beef
Add 1 tablespoon of taco seasoning to the ground beef and mix well. Set aside once cooked.

Prepare Ground Chicken
In the same skillet, add the ground chicken. Cook until fully cooked and no longer pink in the center.

Add the remaining tablespoon of taco seasoning to the ground chicken and mix well. Set aside once cooked.

Heat Black Beans and Corn
Rinse and drain the black beans. In a saucepan, combine black beans and corn, heating over medium until warmed through.
Taco Assembly

Prepare Tortillas
Warm corn or flour tortillas on a skillet for about 30 seconds on each side until pliable.

Assemble Tacos
For each taco, choose a filling (ground beef, ground chicken, or black beans) and place it in the center of the tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and jalapeños.

Cook Rice
In a medium pot, combine the white rice, water, and salt. Bring to a boil over high heat.

Simmer Rice
Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is cooked and water is absorbed.
