Preparing the Broth

    Roasting the Bones

    Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast them in the oven for 30-40 minutes until they are browned.

    Simmering the Broth

    In a large pot, combine the roasted beef bones, water, whole carrots, celery stalks, onion (quartered), garlic cloves (smashed), bay leaves, black peppercorns, and salt. Bring to a boil over medium-high heat, then reduce to low and let simmer for 4-6 hours, skimming off any foam or impurities that rise to the surface.

    Straining the Broth

    After simmering, remove the pot from heat and strain the broth through a fine-mesh sieve or cheesecloth into another pot. Discard the solids and allow the broth to cool.

Clarifying the Broth

    Preparing the Clarifying Mixture

    In a mixing bowl, combine the egg whites, ground beef, water, and lemon juice. Mix well until combined.

    Clarifying the Broth

    Place the strained broth back on the heat and bring it to a gentle simmer. Add the clarifying mixture to the pot, stirring gently. Allow it to simmer for about 30 minutes without stirring.

    Straining Again

    After 30 minutes, remove the pot from heat and strain the broth again through a fine-mesh sieve lined with cheesecloth. This will leave you with a clear consomme.
