Prepare the Corn Tortilla Chips
Cut each corn tortilla into quarters to create triangle-shaped chips. Heat vegetable oil in a deep pan over medium-high heat. Once the oil is hot, fry the tortilla pieces in batches until they are golden and crispy, about 2-3 minutes per batch. Remove the chips from the oil and place them on a paper towel-lined plate to drain any excess oil. Sprinkle with salt to taste.

Make the Salsa Roja
In a blender, combine ripe tomatoes, chopped white onion, garlic cloves, and fresh cilantro. Blend until smooth. Add lime juice and salt, then pulse a few times to combine. Taste and adjust seasoning if necessary. Transfer to a bowl and set aside for serving.
Birria Crema

Prepare the Birria Crema
In a mixing bowl, combine sour cream, birria spice blend, and lime zest. Mix well until fully combined and creamy. Taste and adjust seasoning if needed. Refrigerate until ready to serve.
