Prepare the Oil
In a large, deep frying pan, heat the vegetable oil over medium heat until hot but not smoking.

Cut the Tortillas
While the oil is heating, stack the corn tortillas and cut them into wedges (each tortilla into 6-8 pieces).

Fry the Chips
Once the oil is hot, carefully add a handful of tortilla wedges to the pan. Fry for 2-3 minutes or until golden brown, turning occasionally.

Drain the Chips
Remove the chips using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Season with salt while they are still warm.

Mix the Salsa
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, and finely chopped cilantro.

Add Lime and Salt
Squeeze the lime juice over the mixture and add salt. Stir well to combine all the ingredients.

Let it Rest
Let the salsa sit for at least 15 minutes to allow flavors to meld before serving.
