Chicken Preparation

    Prepare the Chicken

    In a large pot, add the chicken thighs, chopped onion, minced garlic, cumin, oregano, salt, dried guajillo chiles, and dried ancho chiles. Pour in the chicken broth and bring to a boil.

    Simmer

    Reduce the heat to low and cover the pot. Let it simmer for about 30-40 minutes, or until the chicken is tender and cooked through.

    Shred the Chicken

    Remove the chicken from the pot and shred it using two forks. Set aside. Strain the broth and reserve it for later use.

Assembling Tacos

    Prepare the Tortillas

    In a skillet over medium heat, warm a corn tortilla until pliable. Sprinkle a portion of shredded cheese on one half of the tortilla.

    Add Chicken and Toppings

    Add a portion of the shredded chicken over the cheese. Sprinkle with diced onion and chopped cilantro. Fold the tortilla in half to create a taco.

    Fry the Tacos

    In the same skillet, add a little oil if needed, and fry the taco until golden brown and crispy on both sides, about 2-3 minutes per side.

    Serve

    Serve the chicken birria tacos hot with lime wedges on the side. Optionally, you can serve with the reserved broth for dipping.
