Preparation of Meat

Season the Pork
In a small bowl, mix together salt, black pepper, cumin, oregano, garlic powder, and onion powder. Rub this spice mixture all over the pork shoulder.

Slow Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Pour the orange juice and lime juice over the pork. Add the bay leaves on top. Cover and cook on low for 8 hours or until the pork is tender and easily shreds.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces. Discard any excess fat and bay leaves.

Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are warm and pliable.

Assemble the Tacos
Place a generous portion of shredded carnitas on each tortilla. Top with diced onions and fresh cilantro. Serve with lime wedges on the side for squeezing over the tacos.
