For the Birria

    Prepare the Chilies

    Remove the stems and seeds from the dried guajillo and ancho chilies. Place them in a pot of boiling water and let them soak for about 15 minutes until soft.

    Blend Ingredients

    In a blender, combine the softened chilies, black beans, vegetable broth, garlic cloves, cumin powder, oregano, salt, pepper, and lime juice. Blend until smooth.

    Cook the Birria

    In a large pot, heat the olive oil over medium heat. Pour the blended mixture into the pot and bring to a simmer. Reduce heat and let it cook for about 30 minutes, stirring occasionally.

For the Tortillas

    Prepare the Tortillas

    In a large skillet over medium heat, lightly fry each corn tortilla for about 30 seconds on each side until warm and pliable.

    Assemble the Tacos

    Place a portion of the birria mixture on one half of each tortilla. Top with vegan cheese, chopped onion, and cilantro. Fold the tortilla over to create a taco.

    Serve

    Serve the tacos immediately with additional birria consomme on the side for dipping.
