Preparation

    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps prevent the rice from becoming sticky.

    Chop Vegetables

    Finely chop the onion and mince the garlic cloves. Set them aside for later use.

Cooking

    Sauté Aromatics

    In a medium pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Spices

    Add the dried chipotle pepper, bay leaf, ground cumin, salt, and black pepper to the pot. Stir to combine with the onion and garlic mixture.

    Cook the Rice

    Add the rinsed basmati rice to the pot, stirring to coat the rice with the oil and spices. Pour in the chicken consomé and bring to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

    Fluff and Serve

    Once cooked, remove the pot from heat and let it sit, covered, for 5 minutes. Remove the chipotle pepper and bay leaf. Fluff the rice with a fork and stir in chopped cilantro. Serve with lime wedges on the side.
