Prepare the Beef

In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt, pepper, cumin, garlic powder, onion powder, and chili powder. Sear the beef on all sides until browned, about 5-7 minutes.

Add beef broth to the pot, ensuring it covers the beef. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until the beef is tender and easily shredded.

Cook the Rice
In a medium saucepan, combine the rice, water, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

Prepare the Honey Lime Slaw

Combine Ingredients
In a large bowl, combine shredded green cabbage and grated carrot.

In a small bowl, whisk together honey, lime juice, and salt. Pour the dressing over the cabbage and carrot mix.

Toss the slaw until well combined and set aside to marinate for at least 15 minutes.
