Prepare the Beef

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt, pepper, cumin, garlic powder, onion powder, and chili powder. Sear the beef on all sides until browned, about 5-7 minutes.

    Add Broth and Simmer

    Add beef broth to the pot, ensuring it covers the beef. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot with the broth and keep warm.

Make the Birria Rice

    Cook the Rice

    In a medium saucepan, combine the rice, water, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

    Flavor the Rice

    Once cooked, remove from heat, discard the bay leaf, and stir in cilantro and lime juice. Fluff with a fork and set aside.

Prepare the Honey Lime Slaw

    Combine Ingredients

    In a large bowl, combine shredded green cabbage and grated carrot.

    Mix Dressing

    In a small bowl, whisk together honey, lime juice, and salt. Pour the dressing over the cabbage and carrot mix.

    Toss the slaw until well combined and set aside to marinate for at least 15 minutes.

Assemble the Bowl

    In a serving bowl, start with a base of birria rice, followed by a generous portion of shredded beef, and top it with honey lime slaw.

    Spoon the street corn over the slaw, followed by pickled red onions, tortilla strips, and a sprinkle of cotija cheese.
