    Season the Prime Rib

    In a small bowl, combine salt, black pepper, garlic powder, chopped rosemary, and thyme. If using, mix in olive oil to form a paste. Rub the seasoning mixture all over the prime rib roast.

    Rest the Meat

    Let the seasoned prime rib sit at room temperature for about 1 hour to allow the flavors to penetrate and the meat to come to room temperature.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Prime Rib

    Place the prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to develop a crust.

    Reduce Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness (about 1.5 to 2 hours for medium-rare).

    Rest Before Slicing

    Remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute throughout the meat.

    Make Gravy (Optional)

    If desired, use the drippings from the roasting pan and add beef broth to make a delicious gravy.
