Preparation
Prepare the Lobsters
Bring a large pot of salted water to a boil. Add lobsters and cook for about 5 minutes. Remove and let cool. Once cool, split lobsters in half lengthwise and remove the meat from the claws and tails. Set the shells aside.
Make the Stuffing
In a large bowl, combine the cooked seafood mixture with cubed bread, fish stock, parsley, Old Bay seasoning, salt, and black pepper. Mix well until the bread is moistened.
Assembly and Baking
Stuff the Lobster
Spoon the seafood stuffing into the lobster shells, packing it lightly. Place the lobster halves on a baking sheet.
Bake the Lobster
Preheat your oven to 375°F (190°C). Dot the stuffed lobsters with the remaining butter. Bake for 20-25 minutes, until the lobster meat is cooked through and the stuffing is golden brown.
Serve
Remove from the oven and let cool for a few minutes before serving. Enjoy your baked stuffed lobster!
