For the Coconut Shrimp

Prepare the Shrimp
In a bowl, season the shrimp with salt and pepper. Set aside.

Set Up Dredging Stations
Set up three shallow bowls: one with flour, one with beaten eggs, and one mixed with shredded coconut and panko breadcrumbs.

Dredge the Shrimp
Coat each shrimp in flour, then dip into the egg, and finally coat with the coconut and panko mixture.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Combine Ingredients
In a small saucepan, combine port wine, honey, soy sauce, lime juice, and minced garlic.

Simmer
Bring to a simmer over medium heat and cook until slightly thickened, about 5-7 minutes. Remove from heat and let cool.
