    Prepare the Base

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Broth

    Stir in the diced potatoes and add the chicken or vegetable broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15 minutes.

    Thicken the Chowder

    In a small bowl, mix the flour with a little bit of the heavy cream to create a smooth paste. Gradually stir this mixture into the pot. This will help thicken the chowder.

    Combine Ingredients

    Add the clams, remaining heavy cream, bay leaves, and thyme to the pot. Stir well and let it simmer for another 10 minutes. Season with salt and black pepper to taste.

    Serve

    Remove the bay leaves and ladle the chowder into bowls. Garnish with fresh parsley before serving.
