Soup Base

Method

Preparation

  1. 1

    Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

  2. 2

    Add Garlic and Broth

Stir in the minced garlic and cook for an additional 1-2 minutes. Pour in the beef broth and white wine, then add thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer and let it cook for about 20 minutes.

Baking

  1. 3

    Prepare for Baking

Preheat your oven to 350°F (175°C). Remove the bay leaf from the soup and ladle the soup into oven-safe bowls.

  2. 4

    Add Toppings

Top each bowl of soup with a generous amount of cubed bread and shredded Swiss cheese. Sprinkle with fresh parsley.

  3. 5

    Bake

Place the bowls on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
