Making the Bagels

Activate the Yeast
In a large bowl, combine warm water, sugar, and active dry yeast. Allow to sit for about 5-10 minutes until frothy.

Form the Dough
Add the all-purpose flour and salt to the yeast mixture. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Bagels
Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and poke a hole through the center to form a bagel shape.

Second Rise
Place shaped bagels on a baking sheet lined with parchment paper. Cover and let rise for an additional 30 minutes.

Boil the Bagels
Preheat your oven to 425°F (220°C). In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1-2 minutes on each side, then return to the baking sheet.
