Preparing the Dough
1. Activate Yeast
In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, add the all-purpose flour and salt. Create a well in the center and pour in the activated yeast mixture and olive oil.
3. Knead the Dough
Mix until a dough forms, then turn it out onto a floured surface. Knead the dough for about 10 minutes until it's smooth and elastic.
4. First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
6. Shape the Bagels
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole through the center and stretch it to form a bagel shape.
7. Boil Bagels
Bring a large pot of water to a boil. Add a tablespoon of sugar to the water. Boil each bagel for about 1-2 minutes on each side, then remove and place on the prepared baking sheet.
