Potato Chips Preparation

    Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes very thinly (about 1/8 inch thick).

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain the potatoes and pat them dry with paper towels to remove excess moisture.

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add a handful of potato slices to the hot oil, being cautious not to overcrowd the pot. Fry them until they are golden brown and crispy, about 3-4 minutes.

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.

    While the chips are still warm, sprinkle them with salt and paprika to taste.

Roe Topping Preparation
