Bagel Preparation

Activate Yeast
In a small bowl, mix warm water (1.5 cups) with sugar (2 tbs) and active dry yeast (1 tbs). Allow to sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbs). Pour in the activated yeast mixture and olive oil (2 tbs). Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Shape into a ball.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape Bagels
After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center with your finger, stretching it to form a bagel shape.

Prepare for Baking
Preheat your oven to 425°F (220°C). Place boiled bagels on a baking sheet lined with parchment paper.

Sprinkle the bagels with your choice of toppings: sesame seeds (0.5 cups), poppy seeds (0.5 cups), sea salt (0.25 cups), or everything bagel seasoning (0.25 cups).

Bake Bagels
Bake the bagels in the preheated oven for 20-25 minutes, or until golden brown. Let cool on a wire rack.
