Preparing the Dough

Activate Yeast
In a bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine the flour and salt. Once the yeast mixture is frothy, pour it into the flour mixture along with the barley malt syrup or honey. Mix until a rough dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until the dough is smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.
Shaping and Boiling the Bagels

Shape the Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center, gently stretching to form a ring.

Boil the Bagels
Bring a large pot of water to a boil and add 1 tablespoon of sugar. Boil each bagel for about 1 minute on each side, then remove and allow to drain on a wire rack.

Preheat Oven
Preheat your oven to 425°F (220°C).

Add Toppings
Sprinkle cornmeal on a baking sheet. Place the boiled bagels on the sheet and add your desired toppings (sesame seeds, poppy seeds, etc.).

Bake the Bagels
Bake the bagels for 20-25 minutes or until they are golden brown.
Serving

Cool and Serve
Remove the bagels from the oven and let them cool on a wire rack. Serve warm or at room temperature with your choice of spreads.
