Method

Preparing the Dough

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center, then pour in the activated yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shaping the Bagels

  1. 5

    Divide the Dough

Once risen, punch down the dough and divide it into 6 equal pieces.

  2. 6

    Shape the Bagels

Roll each piece into a ball, then poke a hole in the center with your finger. Stretch the hole to about 1-2 inches in diameter.

Boiling and Baking

  1. 7

    Prepare the Boiling Solution

In a large pot, bring 8 cups of water, baking soda, and honey (or malt syrup) to a boil.

  2. 8

    Boil the Bagels

Carefully add the shaped bagels to the boiling water. Boil for about 1-2 minutes on each side, then remove with a slotted spoon.

  3. 9

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  4. 10

    Add Toppings and Bake

Place the boiled bagels on a baking sheet lined with parchment paper. Sprinkle with sesame seeds, poppy seeds, or coarse sea salt as desired. Bake for 20-25 minutes, or until golden brown.

Cooling

  1. 11

    Cool the Bagels

Remove the bagels from the oven and let them cool on a wire rack for at least 10 minutes before slicing.
