Main Dish

1. Prepare the Poultry

Preheat your oven to 350°F (175°C). Prepare the turkey by removing the giblets and patting it dry. Season the inside and outside of the turkey with salt, black pepper, garlic powder, onion powder, and paprika. Place the turkey in a large roasting pan.

2. Stuff the Duck

Remove the giblets from the duck and season it the same way as the turkey. Place the duck inside the turkey. Repeat the seasoning for the chicken and place it inside the duck.

3. Add Butter

Melt the butter and pour it over the stuffed turkey. Cover with foil and roast for 3-4 hours, or until the internal temperature reaches 165°F (74°C). Remove the foil in the last 30 minutes to brown.

Cornbread Dressing

4. Sauté Vegetables

In a large skillet, melt 1 cup of butter over medium heat. Add diced celery and onion, and sauté until soft, about 5-7 minutes.

5. Combine Ingredients

In a large bowl, crumble the prepared cornbread. Add the sautéed vegetables, chicken broth, sage, thyme, salt, and black pepper. Mix well.

6. Bake the Dressing

Transfer the mixture to a greased baking dish and bake in the oven for 30-35 minutes, until golden brown.

Etouffee

7. Make the Roux

In a pot, melt 1 cup of butter over medium heat. Whisk in the flour and cook, stirring constantly, until the mixture is a deep brown color (about 15-20 minutes).

8. Add Vegetables

Add the diced onion, green bell pepper, celery, and minced garlic to the roux. Cook until the vegetables are tender, about 5-7 minutes.

9. Finish the Etouffee

Stir in Cajun seasoning and chicken broth. Bring to a simmer and cook for about 10 minutes. Finally, add in the shrimp and cook until they are pink and cooked through. Season with salt and pepper.

Side Orders

10. Prepare Green Beans

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the green beans and sauté until tender, about 5-7 minutes.

11. Make Mashed Potatoes

In a large pot, combine the mashed potatoes with 1 cup of butter and 1 cup of milk. Mix until creamy and well combined. Season with salt and pepper to taste.
