Soak the Lima Beans

Place the 2 cups of lima beans in a large bowl and cover them with water. Let them soak overnight or for at least 8 hours. This helps to soften the beans and reduces cooking time.

After soaking, drain the beans and rinse them under cold water.

Cook the Lima Beans

In a large pot, combine the soaked lima beans, 4 cups of fresh water, and 1 tsp of salt. Bring to a boil over high heat, then reduce the heat to low and simmer. Cover the pot and cook for about 30-40 minutes, or until the beans are tender.

Sauté Garlic

While the beans are cooking, peel and mince the 2 cloves of garlic. In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Once the lima beans are tender, drain any excess water if necessary. Add the sautéed garlic to the beans, along with 1 tsp of black pepper. Stir to combine and let it cook for an additional 2-3 minutes to meld the flavors.
