Rinse the Cornish hens under cold water and pat them dry with paper towels.

Rub the olive oil all over the hens, then season with salt and black pepper both inside and out.

In a large bowl, combine the cooked rice, sautéed vegetables, dried thyme, and dried sage. Mix well.

Carefully stuff each Cornish hen with the rice dressing mixture. Tie the legs together with kitchen twine and tuck the wings under the body.
