Preheat the Oven
Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for cooking the hens evenly.

Prepare the Rice Dressing
In a large skillet, melt the butter over medium heat. Add the chopped celery and onion, cooking until they are soft and translucent, about 5 minutes. Stir in the cooked rice, chicken broth, and chopped parsley, mixing well. Season with salt, pepper, garlic powder, onion powder, and dried thyme. Cook for an additional 2-3 minutes until heated through. Remove from heat and let it cool slightly.

Stuff the Hens
Gently loosen the skin of the Cornish game hens with your fingers. Rub olive oil all over the skin and season with salt, black pepper, garlic powder, onion powder, and dried thyme. Fill the cavity of each hen with the prepared rice dressing, pressing lightly to fit as much as possible.

Truss the Hens
Using kitchen twine, tie the legs of the hens together to secure the stuffing inside. This helps the hens cook evenly.

Roast the Hens
Place the stuffed hens breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced.

Once cooked, let the hens rest for about 10 minutes before carving. Serve warm with any remaining rice dressing on the side.
