Method
Preparing the Smoked Pork Ribs

Prepare the Ribs
Remove the membrane from the back of the pork ribs and trim any excess fat.

Apply Pork Rub
Generously coat the ribs with the pork rub, ensuring all surfaces are covered. Let them marinate in the refrigerator for at least 2 hours or preferably overnight.

Prepare the Smoker
Soak the pecan wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and add the soaked wood chips.

Smoke the Ribs
Place the ribs in the smoker bone side down. Smoke for about 4 hours, maintaining a temperature of 225°F, until the ribs are tender.
Making the Homemade B-B-Q Sauce

Combine Ingredients
In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Simmer the Sauce
Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally. Adjust seasoning with hot sauce to taste.

In a large bowl, mix together coleslaw mix with your favorite dressing. Cover and refrigerate until serving.

Prepare cornbread according to package instructions or your favorite recipe. Allow to cool before slicing.
