Cooking Instructions

  1. 1

    Make the Roux

In a large heavy pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a deep brown color, about 20-30 minutes. Be careful not to burn it.

  2. 2

    Sauté the Vegetables

Add the diced onion, bell pepper, and celery (the 'holy trinity') to the roux. Cook for about 5 minutes until they soften. Add the minced garlic and cook for another minute.

  3. 3

    Add Sausage and Okra

Stir in the sliced Andouille sausage and okra. Cook for an additional 5 minutes, stirring occasionally.

  4. 4

    Incorporate Tomatoes and Broth

Add the canned diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and black pepper. Bring the mixture to a boil.

  5. 5

    Simmer the Gumbo

Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

  6. 6

    Add the Shrimp

After 30 minutes, add the peeled and deveined shrimp to the pot. Cook for an additional 5-7 minutes, until the shrimp are cooked through and pink.

  7. 7

    Serve

Remove bay leaves and serve the gumbo hot, garnished with chopped green onions. Enjoy!
