Main Dish Preparation

    Cook the Fettuccine

    In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.

    Make the Sauce

    In the same skillet, add heavy cream and bring to a simmer. Stir in grated Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper to taste.

    Combine Pasta and Shrimp

    Add the cooked fettuccine and shrimp back into the skillet. Toss to coat in the creamy sauce. Cook for an additional 2-3 minutes until everything is heated through.

    In a separate saucepan, bring water to a boil. Add trimmed asparagus and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

    In a bowl, beat the eggs. In another bowl, place the cornmeal and breadcrumbs together. Dip the shrimp into the egg mixture, then coat with the cornmeal-breadcrumb mixture.

    In a deep skillet, heat oil over medium-high heat. Once hot, fry the coated shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
