Prepare the Ingredients
Chop the onion, bell pepper, celery, and mince the garlic. Shred the cooked chicken breast and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Cook for about 5 minutes or until the vegetables are soft, stirring occasionally.

Add Garlic and Tomatoes
Stir in the minced garlic and cook for another minute. Then, add the diced tomatoes (with juice) and stir to combine.

Add the Cajun seasoning, bay leaves, salt, and black pepper. Stir everything together and let it simmer for about 5 minutes.

Add the shredded chicken and fully cooked shrimp to the skillet. Pour in the low-fat chicken broth and stir gently to combine all ingredients.

Reduce the heat to low and let the mixture simmer for 10-15 minutes, allowing the flavors to meld together. Taste and adjust seasoning with hot sauce if desired.
