Add Garlic
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Cooking the Gumbo

Combine Ingredients
Add the sliced andouille sausage and shredded chicken to the pot. Stir to combine.

Add Liquids
Pour in the chicken broth and add the tomato paste, stirring to incorporate.

Season the Mixture
Add the Cajun seasoning, bay leaves, black pepper, and salt to taste. Stir well.

Simmer
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld.

Add Seafood
During the last 5 minutes of cooking, add the shrimp and crabmeat to the pot, stirring gently.
Serving

Serve the Gumbo
Remove the bay leaves before serving. Serve the gumbo over cooked rice and garnish with chopped green onions.
